Roasted Lemon Broccoli and Kale Quinoa Salad

Hey loves!

I am headed to a family reunion tonight and so naturally I am being the #healthnut of the family and cooking up something with loads of veggies and jam packed with nutrients!

I absolutely love cooking up healthy dishes and feeding them to people that have NO idea that what they are eating is the epitome of health...it’s so satisfying! TBH I do this to my sister all the time and she never suspects! (sorry big sis...now you know! lol)

Whenever I go to a gathering or dinner at someone's house, I always bring a healthy option because you never know what will be served and it's a nice gift to the hostess as contribution. I know a lot of health nuts out there find social gatherings extremely stressful because of the food situation, but it’s time to stop wasting your time being anxious about it because this recipe is an easy crowd pleaser and gives you that no - stress feeling of knowing you have a healthy option!

This recipe is like the lazy person’s dream too...I literally made this with bed hair, pajamas on and sipping my morning coffee all while cuddling the dog, cleaning up the apartment and catching up on a podcast!

Here’s what your going to need:

1 cup quinoa

1 cup bone broth + 1 cup water

Cook quinoa as directed on the package (I use my rice cooker on the white rice setting)

1 leek chopped thinly

2 medium heads of broccoli chopped into bite sized pieces (chop and cook the stems too! So yummy)

Preheat the oven to 375 and roast broccoli and leeks on a baking pan with coconut oil, salt and pepper until nice and crispy/a teeny bit burnt!

While the broccoli and leeks are roasting:

Chop up ½ bunch of de-stemmed curly kale

Put kale in bowl and add the following:

Juice of 1 lemon

Sea salt

Massage around so the kale starts to wilt. Once all the veggies are roasted and the quinoa is cooked and cooled, add everything to a big bowl and mix thoroughly.

Add in:

Primal Kitchen Lemon Tumeric Dressing (or more lemon and some extra virgin olive oil to taste if you don’t have the dressing)

Salt and pepper to taste

Voila! Easy peasy, no fuss quinoa fancy quinoa salad!
