Leafy Greek Salad

One of my all time fave and colorful salads! This is definitely my go-to at a salad bar and it never disappoints!

What I love most about this salad is that it keeps me full for hours due to all the healthy fats, carbs and fiber. I am not the kind of person that loves to eat a heavy lunch, and this guy packs in a lot of punch while not making me feel too full for the rest of the day!

Here’s the how-to. Enjoy babes!

Choose your Greens: spinach, arugula, mixed greens, kale, romaine, butter lettuce

Load up on toppings!

  • Roasted sweet potato/butternut squash or quinoa

  • kalamata olives

  • marinated artichoke hearts

  • roasted bell pepper

  • garbanzo beans

  • pumpkin seeds

  • optional: feta or goats cheese, or protein such as an egg or chicken

  • Choose your dressing: I love either a clean ingredient balsamic, or lemon vinaigrette (watch out for sugar content and type of oil!) Or I just do my own with some olive oil and vinegar. So simple and easy!
